Move Over, Carrots. Beets are here.

It’s time to put down those old carrots and make way for the new roots: beets! These earthy vegetables have stolen my taste buds off late, and I’m all for it.

Growing up, carrots were my go-to snack. From sweet halva while growing up to crunchy baby carrots till today, I couldn’t get enough. But recently, I’ve been exploring these beets, and slowly I have started to change my mind. First off, the taste. Whether it’s pickled, juices, a South Indian appetizer dish, or even in my homemade ice cream (thanks, Ninja Creami!), beets always leaves a satisfying aftertaste. Secondly, beets are my new post-workout shake. After my 20 min zone2 walk or the burpee workout to begin the week, there’s nothing quite like a refreshing beet juice to quench my thirst.

And let’s not forget about the oven-roasted goodness. When you char those beets just right, they develop a smoky, caramelized flavor that carrots can never get.But wait, there’s more! Beets aren’t just delicious; they’re loaded with folate, manganese, and copper, which are essential for maintaining a healthy heart, bones, and all that benefits (you can google it!). Plus, they’re low in calories and fat, so you can indulge guilt-free.

So, there you have it — Beets have officially dethroned carrots as my favorite root vegetable. With the taste, post-workout perks, and nutritional superpower, they displaced carrots. So, next time you’re at the grocery store, pick some up and ask me for my beets ice cream recipe.
